Lapsang Souchong tea is a black tea famous for its smokey aroma and flavor from the Fujian Province in China. To create this tea finished tea smoked over pine fires, imparting a sweet smoky aroma and flavor to the tea. Although this sometimes gets a bad rep for being brashly smokey, but we fine it to be sweet, refreshing light smoky flavor with a golden color to the brew. The smoking process is done several times during the drying process. In order to do this, elaborate smoke houses have been erected which are several stories high with holes are cut in the floor to allow different amounts of smoke through. Pine fires are built in pits on the ground level and tended by a tea master who takes careful monitors the smoke levels to ensure that its fresh, sweet fragrance isn't lost as it reaches the tea which is spread out on each level of the smoke house.
